Came from a Country magazine and used often when I made muffins every Monday for breakfast. That's it. Combine: 3/4 c packed brown sugar 1/2 c buttermilk or sour milk 1/3 c vegetable oil 1 egg beaten 1 t vanilla In a separate bowl combine: 2 c flour 1/2 t bkg soda 1/2 t salt Mix the wet with the dry and stir in 1 c diced rhubarb 1/2 c chopped nuts (op) Spoon batter into 12 muffin cups and sprinkle with topping For topping mix: 1/4 c packed brown sugar 1/4 c chopped nuts 1/2 t cinnamon Bake at 375 for 20 min.
